Vegan French Toast

My eyes blink open as the morning sun shines in my window and the smell of cinnamon and warm syrup fill the air. I hop out of bed and waddle into the kitchen. I see my Dad still in his bathrobe cooking breakfast in the kitchen. He says, “ Good morning Kayla! Do you want breakfast?” in his happy voice smiling at me. “Yes please,” I smile as I sit down at the table.

Weekend mornings were not always like this growing up, but it definitely was one of my favorite happy memories as a kid when Dad made breakfast. Nowadays, we seem to run out the door and we focus less on choosing healthy food choices and don’t sit down to enjoy meals with family or friends. But to me, family meals are so important to connect with your children and family. And help us to make healthier choices.

Something I have been interested lately is putting twist on foods that I love to make healthier. Even though I am now plant based or mostly vegan, it doesn’t mean that I can’t have my favorite foods or foods that have meaning beyond just food. Something that I was missing and really wanted, but wasn’t sure I could since I’ve given up eating eggs is french toast. Well I actually found a vegan French Toast recipe and thought it was so simple and easy, I couldn’t believe I never tried it before.

Ingredients

  • 4-8 slices of thick whole grain bread

  • 1 cup almond milk or non-dairy milk of your choice

  • 1 Tbsp. chia seeds

  • 1 tsp. cinnamon

  • 1 tsp. vanilla

Preparation

Step 1: Prepare all ingredients

First, gather all your ingredients: bread, almond milk or plant based milk of your choice, chia seeds, vanilla extract, and cinnamon.


Choosing your bread is the most important step because you don’t want a thin bread where your french toast is soggy unless you like soggy French Toast. French bread, of course would work the best, but I found this bread at Wegmans that was perfect for French Toast! (side note: I did find out this bread is not vegan because it does have honey)


Step 2: Warm up your griddle and aid non-stick spray or oil.


Step 3: While griddle is warming up, mix all ingredients together except bread. Whisk together milk, chia seeds, cinnamon, and vanilla together in a small bowl.


Step 4: Refrigerate mixture for 20 minutes.


Step 5: Dip bread in mixture, coating both sides then toast each side until golden brown in a pan or griddle on medium heat.


Once griddle is warmed up, drop bread in mixture and place on the griddle. Cook each side until golden brown. It may look a little not done…it may take some time or practice to figure out the right temperature and time needed to cook both sides. Once done, serve with warm syrup and enjoy!
