Spring is here!!!

The birds are chirping, the sun is shining, more greenery and flowers are starting to bloom, and ice cream shops are opening for the season ahead!

Ice cream is one of my favorite foods since a kid. I would actually eat my ice cream upside down though eating the cone first (I have no idea why). Of course the ice cream would not only melt, but would fall out and would make a mess. I probably got more on me then in me lol.

Now that I restrain from eating dairy, does that mean no more ice cream? Actually many ice cream shops now serve dairy free options. And here is an easy and quick way to make the treat for yourself with no dairy and less fat and sugar - win! win!

Ingredients

  • 1 frozen banana

  • 1/2-1 cup (handful) of frozen mixed berries

  • 1 Tablespoon of almond butter

  • 1/2 - 1 cup almond milk

Preparation

Step 1


Gather all your ingredients: frozen bananas (I freeze all my bananas when they get too ripe to eat so always have these on hand), frozen mixed berries, almond butter, and almond milk. You can substitute mixed berries for any fruit and could use coconut milk or a different nut butter.



Step 2


Add ingredients to blender.



Step 3


After all ingredients are added. Blend or crush in blender for a few minutes or until blended.



Step 4


Taste and enjoy!!


You may want to add less or more milk depending on creaminess desired. You can freeze it in freezer bags or glass containers/jars.
